Recipe : Rendang Meat Pie

You probably have seen my post on Instagram and my Facebook on my new recipe, Rendang Meat Pie. It is my take on New Zealand's staple food, meat pie with a Malaysian twist. I personally love Rendang, it is one of the dishes that I look for during hari raya. Sometimes when my mom cooks Rendang on a normal day, it always brings me back to hari raya memories. :) Anyway, if you are familiar with rendang recipe, you should know that coconut milk is essential because it brings out the flavour of the spices as well as the meat. In my household, I will always use the option of using milk in my rendang and even in my curries. Never try adding milk in your dishes? Try it! Honestly it doesn't make much difference and it is way healthier as a glass of milk contains 8 grams of protein.



Including dairy in your daily life is as easy as eating your morning yogurt, milk in your cereals or even cheese slices in your sandwiches. My favourite sandwich combo is 2 slices of bread, chilli tuna and a slice of cheddar cheese, grilled to perfection! Dairy contains calcium which helps in strengthening and maintaining our bones. In this recipe, I use Anchor unsalted butter to substitute oil and Fernleaf low fat milk to substitute coconut milk. The result? Simply yummy! :D Oh, I also used the Anchor Culinary Cream to create an easy creamy pasta for Marissa and she absolutely loves it! I think I made that pasta 4 times in 2 weeks. :D Fonterra Brands Malaysia has an amazing array of dairy products and myself have been a loyal user to Anchor butter (my favourite butter to bake with). And now I have found my new favourite cream, the Anchor Culinary Cream. It is soooo good, just add in to any pasta, it will make your pasta tastier than ever! 

Ingredients for Rendang Meat Pie


Prep Time : 10 minutes
Cooking Time : 55 minutes
Taste Profile : Savoury
Servings : 32 pcs (Large) / 128pcs (mini bite size)

300g               Minced meat
60g                 Anchor unsalted butter
½                    Yellow onion
3 cloves          Garlic
1 inch             Ginger
4                     Dried chilli
1                     Asam keping
1                     Lemongrass
½ tsp              Fennel powder
1 tbsp             Kerisik
¾ cup            Fernleaf low fat milk
                      Salt
                      Sugar
8 pcs              Puff pastry sheet
1                    Egg

METHODS


1.     Reheat butter in pan until melted. Add in yellow onion and cook until translucent.





 2.     Blend garlic, ginger and dried chilli. Pour into the pan together with lemongrass  and cook for   
       about 5 minutes.



 3.   Put in minced meat and fennel powder. Cook until the meat is no longer red.




4.  Pour in milk, stir well. Add in salt and sugar to taste.



5. Cook meat until the milk almost dry out and then take it off the stove.



6. Let it cool for at least 30 minutes before wrapping in puff pastry.



7. After 30 minutes, reheat oven at 190 degrees.

8. Cut one piece of puff pastry into 4 squares (for large size) or 16 squares (for mini bite size)



9. Use 2 teaspoons of meat filling for large size and 1 tsp for mini bite size. Wrap accordingly.  *Usage of meat filling depends on the designs and size of you puff pastry.

10. Beat one egg in a bowl and use it as an egg wash to brush on the pastry.

Cut out the stars using a cookie cutter


11. Bake for 20 - 25 minutes or until golden brown.


12. Serve while pastry is still warm.



Tadaaaa! My very own Rendang Meat Pie! *hehe* Honestly eating it while they are still warm is how it should be.
