Recipe : Smoked Salmon Mini Frittata

Last week I was invited to a cooking demonstration with Nadia Lim, the Masterchef New Zealand winner from season two in conjunction of the New Zealand Culinary Week. I was so excited to be a part of this demonstration because as you know I love baking and enjoy cooking. :) I would like to tell you guys all about the cooking demonstration but that post will be up next week. Today I want to talk about the 'Mystery Bag' Food Challenge for bloggers.

These are the 4 ingredients included in the 'Mystery Bag' Food Challenge. We need to create a dish using any two of these New Zealand ingredients. ^_^



I was thinking what I can do with these ingredients. I really don't know what to cook but I know I want to create a meal for breakfast as breakfast is my favourite meal of all. Yeay for breakfast! ^_^  In the beginning I wanted to create an Apple Cinnamon French Toast recipe, but sadly my dad drank the whole bottle of the apple juice so I gotta change my plan. -_- Gotta think fast, and this is what I came up with. :)


SMOKED SALMON MINI FRITTATA


INGREDIENTS :
(Makes 6pcs)

Smoked Salmon
Panko Breadcrumbs
4 medium sized eggs *You can use 2 or 3 large eggs
Half a tomato (removed the seeds and diced) *You can add in spinach too
Basil powder *You can use any herbs and spices, I have a 'thing' with basil. :P
Salt
Black Pepper


And you will need large muffin tray.



HOW TO :

The first thing you need to do is to preheat your oven at 220 degrees.

Spray your muffin tray with cooking spray or just use butter like I did. This is to prevent the frittata from sticking to the pan so it will be easier to remove and plating process.

Spread the panko breadcrumbs (2 tbsps each)  into the muffin tray. The panko breadcrumbs will act as the crust, well sort of like a crust. :P

Get your smoked salmon and place it at the side of each one of the muffin tray.

Crack the eggs, add in basil powder and cracked black pepper. Mix well. Pour the eggs into a measurement cup so it will be easier for you to pour the mixture into the muffin tray.

Add in your diced tomato and the egg mixture. Fill it to the top. Sprinkle some salt on each frittata. Baked for about 15-17 minutes.

Don't they look yummy? :) Let them rest for about 2 minutes.

Get a knife and run through the knife the edge of the frittata to make it easier to remove it from the muffin tray. Lining the muffin tray with butter or cooking spray really helps a lot to get it out of the pan.

Tadaaaaaaa! My version of Smoked Salmon Mini Frittata. :)


The smoked salmon is definitely the star in this dish. The smokiness of the salmon ties all the flavour together. It is amazing! Mini frittata is a great idea for breakfast because you are getting your protein and veggies early in the morning. What I like the most about this recipe is that you can bake the frittata in advance, store in the freezer. Whenever you feel like eating it for breakfast, get it out from the freezer and keep it in your fridge the night before. All you have to do the next morning is to reheat them and you are ready to go! :)
