Recipe : Apple Pie


Assalamualaikum and hello love!


How's everybody doing? Malaysia is suffering from a terrible haze right now. It is so dissapointing that I have to reschedule my plans and be stuck at home. Furthermore, I have to bear this situation with flu and fever. Oh not forgetting been coughing all day long. :(

Anyhoooooo.. Yesterday, despite being stuck at home, I decided to bake an apple pie! How random is that? Haha no actually I think I dreamt about apple pie the nite before and woke up in the morning with a sudden crave for it! :D ok ok, enough talking, lets get started! ;)


What you'll need :

Pie Crust :
2 cups of flour
1 tsp of granulated sugar
1/4 tsp of salt
12 tbsp of cold butter (I cut them into cubes)
5 tbsps of cold water (depends on your mixture consistency/ humidity of your kitchen)

Filling :
7 small apples (or 3 large) - depends on what u like, whether red or green apples. I used 6 green apples because I love the tartness in a pie and also 1 red apple.
1/2 cup of sugar 
2 tbsps of flour
1 tsp of ground cinnamon

Toppings :
A lil bit of water (you can use egg wash too)
A lil bit of sugar


How To :


1. Preheat your oven to 200 degrees Celsius (You can adjust the temperature according to your oven) 


2. Mix flour, sugar, salt and cold butter. You can use a fork but I used my hand.



Mix everything together until you reached to this consistency. Sort of like breadcrumbs.



3.  Add 2 tbsps of cold water and mix. Add the remaining water. You might need more or less water, once the dough is not sticky, you can stop pouring the cold water.

*Tips 
1. Make sure the water is cold. Add iced cubes into the water to be sure. 
2. Don't overmix, you will end up with tough dough.

             



4. Divide the dough into 2 balls. One is smaller than the other. The smaller ball is for the toppings, and the bigger one is for the bottom of the pie. But i f you want to make an apple tart/crostata instead of a pie, you can divide the dough mixture into half. Keep the dough in the fridge for 30 minutes to firm up. 

*Tips : You can also make the pie crust ahead and keep it in the freezer. Thaw it when you want to use it. 






5. While waiting for the dough to firm up, peel and cut the apples thinly so the apples will be tender and cooked to perfection.

*Tips : To avoid the apples turn brown, squeeze some lemon juice.



6. In a separate bowl, mix sugar, cinnamon and flour. Whisk.






7. Add the apples into the cinnamon sugar mixture. Mix.





You will have this.



9. Roll out your pie crust, and put it on a 9 inch pie pan or any kind of pan. Try to adjust the edges. It doesn't have to be perfect, you can patch up any hollows or if you break the pie crust.

*Tips : When rolling out the dough, start in the middle and rotate after one roll. This is to ensure you'll get the same thickness of the crust.




10. Pour the apples into your pie crust.



11. Roll out the smaller dough and cut them into strips. I used the roller cutter with scallop edges to make it prettier. You can use regular knife if you don't have the cutter. But I bought mine at Daiso. ;)



12. Place 3 dough strips on the pie.





13. And  place the remaining 3 strips (different direction, if you get what I mean. hahaha :P )





14. For the final touch, brush on some water on the pie crust and sprinkle some sugar for a golden finish. You can use egg wash too.




15. Bake for about 50 minutes (Again, depends on your oven)


Voila!!



This is my first time baking it and I'm impress with myself. hahaha :P the crust is amazing, so buttery and the flakiness is somewhere between a puff pastry and pie crust The apples are sweet and tart at the same time. The cinnamon aroma is definitely my favourite. I love the combination of cinnamon and apples, perfect! :)
