FOOD | Recipe : Baked Mussels With Potato



Assalamualaikum and hello!

This is the second recipe I created for my NZ Food Challenge. If you haven't check out my first recipe, Lamb Curry, read HERE. :) Okay so for this recipe, I am going to show you guys a simple snacking idea. This recipe is also great for appetizer and as finger food for parties. I was at home with my husband and we were kinda hungry but we don't want anything heavy. We just need something easy and simple to make. This is the usual baked mussels recipe but I add on potatoes because I love the combination of potatoes and cheese. 




I used Talley's Greenshells Mussels (I'm sorry I don't have the box in this photo because when I got the mussels, the packaging is already ruined. It looked wet and pretty gross so I just threw it away). A box of the mussels is weigh at 907g. I would say there is about 40+/- of huge mussels in a box. The mussels are huge, I was overwhelmeed to be honest. *hahaha* SInce there's only my husband and I, I only use around half of the box (17 mussels to be exact) for this recipe, so feel free to double up the recipe if you need to use 1 whole box.




Prep Time : 10 - 15 minutes
Cooking Time : 20 - 30 minutes

INGREDIENTS

1/2 box of Talley's Greenshell Mussels
100 gram of butter (melted)
4 cloves of garlic (grated/chopped)
1 large potato (grated)
1 tsp of salt
Black pepper (grounded)
A small dash of dried Rosemary
125g of Mozzarella cheese (grated)

** TIPS : Grate the potato when you want to start baking the mussels. Potato oxides pretty fast so keep that in mind.

Melted butter and garlic.
Grated potato + salt + pepper + dried rosemary.


  HOW TO  

1. Preheat oven at 190 degrees (or depending on your oven).
2. Add in garlic into melted butter. Mix well.
3. Add in salt, pepper and dried rosemary into the grated potato.
4. Place aluminum foil on your baking tray and lay all the mussels.
5. Brush on the butter garlic mixture on all the mussels.
6. Put 1 tsp of grated potato mixture on each mussels.
7. Brush on the butter garlic once more on top of the potato.
8. Sprinkle mozzarella cheese on top of each mussels.
9. Bake around 20-30 minutes.

Lay all the mussels on baking tray.
Brush on the butter garlic.
1 tsp of the grated potato on each mussels.

Brush on the butter garlic once more.
Sprinkle on mozzarella cheese.




Oh my god, how good does this look? *ahaha* I am not really a seafood person but this mussels is so good! It is so juicy and so huge wey! :D Perfect for snacking and for appetizers, do try it out if you love mussels and seafood!
